Then trim the bottom of the base with a sharp knife so that the globe sits level.

Using a spoon or melon baller, you now have to take the inedible choke out from the center, which will leave you with a hollow cup-like space that you can fill with the stuffing. Some of the stuffing can also be worked with a spoon or fingers between the decorative leaves.

As for the stuffing, you have a pick from a wide range: The usual breadcrumb-cheese-chopped-vegetables such as celery, carrots, onion, etc. (think of turkey); Italian sausage-onion-garlic, flavored with herbs of your choice; herbed breadcrumbs with chopped hard-cooked eggs and chopped anchovies; or seafood such as chopped oysters, shrimps, etc., with breadcrumbs.
